On June 8, 1967, US Navy intelligence ship USS Liberty was suddenly and brutally attacked on the high seas in international waters by the air and naval forces of Israel. The Israeli forces attacked with full knowledge that this was an American ship and lied about it. Survivors have been forbidden for 40 years to tell their story under oath to the American public. Why did Israel attack ?
According to the USS Liberty Naval Survivors:

1. The planned invasion of the Golan Heights which was set to start a few hours after Liberty's arrival in the area. When Liberty arrived, the invasion was postponed for 24 hours, Liberty was attacked, and the invasion took place the next day. Did they postpone the invasion until Liberty was out of the way and unable to report on the war?

2. It is possible that they were afraid that Liberty might learn and report to the United States that Israeli forces were executing up to 1,000 Egyptian Prisoners of War at El Arish at the very moment that Liberty was just 13 miles off shore.

3. It is also possible that USS Liberty was attacked to prevent the ship from reporting a deliberate massacre of 14 Indian United Nations peacekeepers that took place in Gaza shortly before Israel's attack on USS Liberty.

In the study of international relations there is a term called a security dilemma. It is when one state strengthens their defenses in some way and by doing it it leads to another actor, usually in close proximity to the first, feel threatened in some way, which more often than not, will lead the second actor to increase their defenses. Besides the fact that Nasser guaranteed the elimination of the Jews in Palestine, the alliance of the Egypt, Syria, Jordan, and Iraq, can make it easy to understand why Israel would feel insecure. Hitler attacking Poland is not at all comparable to the Jews looking for a place to settle to avoid persecution, yet again, and feeling threatened when the possibility of it is real.

There is also a topic called a credible commitment problem. It is when an actor has no incentive to remain committed to not attacking. With the two reasons I mentioned before, as well as many other events I did not mention, it is understandable that Israel would do what is one of the options in the credible commitment problem, and that is a first strike advantage. War was almost inevitable and instead of waiting for the four countries to attack Israel, Israel decided to get that advantage of the first strike.

As for the attack on the U.S. ship, I have never heard of that (I am not questioning it happening) but it does not make sense to me because of the fact the U.S. gave financial and military aid to Israel after the USSR gave the same to the Arab alliance. Plus the accounts of the survivors forty years later may not be the best source to understand why they would be attacked.

It seemed like you are putting Israel as the aggressor when that is not the case. They were given what became Israel after WWII by the UN after the feeling of most of the world was that the Jews need a place to settle to avoid persecution and that land is described as their holy land.
